Grate the zucchini into a large bowl and add salt, mix well. Leave them aside for a few minutes to release liquid.
Sprinkle with a generous amount of to help the zucchini release more moisture.
Using your hands, squeeze any extra liquid from the zucchini and transfer them into a clean bowl.
Finely chop the green part of the spring onions.
Finely chop the basil, mint leaves, green onions, dill and add them to the bowl along with lime zest, cumin, chili flakes, crumbled feta and 2 eggs.
Mix everything well to combine and add flour and mix.
Over medium heat place a pan with a few tbsp olive oil. Grab a spoon of the mixture and form a ball, place in the hot pan and press a little on top to spread them well.
Fry them until golden on both sides.
Place the fried on a paper towel to drain any excess oil.
