Greek Zucchini Fritters

They are perfect served as an appetizer or side dish and are so deliciously, crispy and melting, served with a lemon.

Ingredients

  • 500 g zucchini, grated
  • 2 spring onions, only the green part, thinly sliced
  • 1 bunch of mint, only the leaves, finely chopped
  • 1 bunch of basil, finely chopped
  • 2 grated zest of 2 limes
  • 2 pinches chili flakes
  • 1 tsp leveled ground cumin
  • 1/3 bunch of dill, finely chopped
  • 200 g feta cheese, crumbled
  • 2 eggs
  • 80 g all-purpose flour
  • 2 tbsp olive oil
  • salt
  • pepper
  • fresh coriander, to serve
  • lime wedges, to serve

For dipping sauce

  • 200 g Greek strained yogurt
  • 1 tbsp honey
  • 1 tsp leveled ground cumin
  • freshly ground pepper

Instructions

  • Grate the zucchini into a large bowl and add salt, mix well. Leave them aside for a few minutes to release liquid.
  • Sprinkle with a generous amount of to help the zucchini release more moisture.
  • Using your hands, squeeze any extra liquid from the zucchini and transfer them into a clean bowl.
  • Finely chop the green part of the spring onions.
  • Finely chop the basil, mint leaves, green onions, dill and add them to the bowl along with lime zest, cumin, chili flakes, crumbled feta and 2 eggs.
  • Mix everything well to combine and add flour and mix.
  • Over medium heat place a pan with a few tbsp olive oil. Grab a spoon of the mixture and form a ball, place in the hot pan and press a little on top to spread them well.
  • Fry them until golden on both sides.
  • Place the fried on a paper towel to drain any excess oil.

For the sauce

  • For the dipping sauce we have to combine in a bowl all ingredients with the yogurt and stir well.
  • Serve the zucchini fritters warm with the dipping sauce.
