Rolled Dumplings with Beans Recipe

Rolled dumplings or štruklji are traditional Slovenian dish made very often and for many different occasions.

Ingredients

For the Dough:

  • 1 egg
  • 2 cups all-purpose flour
  • ½ cup warm water
  • 1 tbsp oil
  • Pinch of salt
  • ½ tsp vinegar or lemon juice

For the dry bean filling:

  • 300 g pre-cooked beans (or canned, drained)
  • 100 g sour cream
  • 2 tbsp bread crumbs
  • salt to taste
  • black pepper to taste
  • fresh parsley finely chopped (finally chopped)
  • 2 cloves garlic (finally chopped)

For the Topping:

  • 2 tbsp butter
  • 3 tbsp breadcrumbs

Instructions

Prepare the dough

  • In a bowl, mix flour, egg, water, oil, salt, and vinegar. Knead until smooth and elastic. Cover and let rest for 30 minutes.

Make the filling

  • Add the beans into a food processor and mash them well. Then add all the ingredients, including garlic, parsley, salt, and pepper, but leave the breadcrumbs. Mix well.
  • Take out the ready dough and roll it out on a flat surface and stretch.
  • Spread the filling on top, then roll it and cut the roll into smaller pieces. 
  • Roll tightly into a log. Optionally wrap in cheesecloth.
  • Boil water in a pot and add salt. Then place the dumplings gently in boiling salted water and cook for 25–30 minutes.
  • Drain them and transfer them on a serving plate.
  • In a frying pan melt a butter and add the bread crumbs. Fried them for a few minutes.
  • Remove the roll, slice into pieces, and top with buttered breadcrumbs.
  • Serve them with goulash or roast meat.

Notes

- Use well-cooked beans for smoother filling
- Do not overfill to prevent breaking
- Keep water at a gentle simmer
- Let rest before slicing for best texture
