Make the filling
Add the beans into a food processor and mash them well. Then add all the ingredients, including garlic, parsley, salt, and pepper, but leave the breadcrumbs. Mix well.
Take out the ready dough and roll it out on a flat surface and stretch.
Spread the filling on top, then roll it and cut the roll into smaller pieces.
Roll tightly into a log. Optionally wrap in cheesecloth.
Boil water in a pot and add salt. Then place the dumplings gently in boiling salted water and cook for 25–30 minutes.
Drain them and transfer them on a serving plate.
In a frying pan melt a butter and add the bread crumbs. Fried them for a few minutes.
Remove the roll, slice into pieces, and top with buttered breadcrumbs.
Serve them with goulash or roast meat.
Notes
- Use well-cooked beans for smoother filling - Do not overfill to prevent breaking - Keep water at a gentle simmer - Let rest before slicing for best texture
