Equipment

  • 1 Blender or food processor
  • 1 Measuring cups and measuring spoons
  • 1 Rubber spatula
  • 1 Serving bowl
  • 1 Small spoon for tasting

Ingredients

For the Dip

  • 8 ounces 225 g high-quality feta cheese, crumbled
  • 6 ounces 170 g roasted red peppers, drained well
  • 2 tablespoons extra virgin olive oil
  • ¼ teaspoon fine sea salt or to taste
  • teaspoon crushed red pepper flakes

Optional Garnishes

  • Extra virgin olive oil for drizzling
  • Crumbled feta cheese
  • Chopped fresh parsley
  • Chopped roasted red peppers
  • Extra crushed red pepper flakes
  • Freshly ground black pepper

For Serving

  • Warm pita bread
  • Pita chips
  • Toasted baguette slices or crostini
  • Crackers
  • Cucumber slices
  • Carrot sticks
  • Celery sticks
  • Bell pepper strips
  • Cherry tomatoes

Instructions

Step 1: Prepare the Ingredients

  • If using jarred roasted red peppers, drain them thoroughly and pat them dry with paper towels to remove excess moisture. Crumble the feta cheese into smaller pieces for easier blending.

Step 2: Add Everything to the Blender

  • Place the feta cheese, roasted red peppers, salt, and crushed red pepper flakes into a blender or food processor.

Step 3: Blend

  • Pulse several times until the ingredients begin to combine. Scrape down the sides of the bowl with a spatula if needed.

Step 4: Add the Olive Oil

  • With the blender running, slowly drizzle in the extra virgin olive oil. Continue blending until the dip becomes completely smooth and creamy.

Step 5: Taste and Adjust

  • Taste the dip and adjust the seasoning if needed. Add a little more olive oil if you prefer a thinner consistency or an extra pinch of red pepper flakes for additional heat.

Step 6: Chill (Optional)

  • Transfer the dip to a serving bowl and refrigerate for 20–30 minutes. Although it can be served immediately, chilling allows the flavors to meld together.

Step 7: Garnish and Serve

  • Before serving, drizzle with extra virgin olive oil and garnish with crumbled feta, chopped parsley, roasted red pepper pieces, and a sprinkle of crushed red pepper flakes. Serve with warm pita bread, crackers, toasted baguette slices, or fresh vegetables.

Notes

  • Drain jarred roasted peppers thoroughly to prevent a watery dip.
  • Taste before adding extra salt since feta varies in saltiness.
  • Authentic Greek feta provides the richest flavor and creamiest texture.
  • Refrigerating the dip briefly enhances the flavor.
  • Store leftovers in an airtight container in the refrigerator for up to 4 days.
