Mekitsi (Bulgarian Fried Dough)

The mekitsas are fried and often powdered with icing sugar and served with jam, honey, cheese or even yogurt.

Ingredients

  • 3 cup all purpose flour
  • tsp yeast
  • 1/8 cup warm water
  • ½ tsp baking soda
  • 1 cup yogurt
  • 1 tbsp Sunflower oil
  • 1 tbsp white vinegar
  • ½ tsp sugar
  • 1 tsp salt
  • canola oil or Peanut Oil

Instructions

  • Mix the yeast with warm water and set it aside in a warm place for 10 minutes.
  • Use a medium bowl to combine together yogurt and baking soda, stir well and set aside.
  • Add 3 cups of flour in a large bowl or you can use a food processor bowl.
  • Pour the rest of the ingredients and mix together. If you are using food processor run for 1 minute until it forms the dough.
  • Transfer the dough in lightly oiled bowl in a warm place and leave it to double its size for 1 hour.
  • Heat a large pan with oil to a medium heat.
  • Moist your hands and cut a small piece of dough with the size of a walnut. Place it on a lightly floured surface and pull the dough into a flat disk with diameter 3-4 inches.
  • Place it in the hot pan and fry it till gets brown then flip it to the other side.
  • Remove from the pan and place on a paper towel to get out any extra oil.
  • Serve warm wand sprinkle with sugar or powdered sugar, add jam, honey, cheese on the side.
