- 3 large ripe tomatoes cut into bite-sized pieces
- 2 green onions chopped
- 1 green pepper cored and diced
- 1 garlic clove finely minced
- ¼ cup extra virgin olive oil
- ¼ cup balsamic vinegar
- 1 tbsp sugar
- Salt to taste
- Freshly ground black pepper to taste
- 2 tbsp fresh parsley finely chopped
- ¼ cup grated Parmesan cheese optional
- 1 cup toasted garlic croutons optional
In a small bowl or jar, whisk together the olive oil, balsamic vinegar, sugar, salt, and black pepper until well combined.
