Ingredients

  • 3 large ripe tomatoes cut into bite-sized pieces
  • 2 green onions chopped
  • 1 green pepper cored and diced
  • 1 garlic clove finely minced
  • ¼ cup extra virgin olive oil
  • ¼ cup balsamic vinegar
  • 1 tbsp sugar
  • Salt to taste
  • Freshly ground black pepper to taste
  • 2 tbsp fresh parsley finely chopped
  • ¼ cup grated Parmesan cheese optional
  • 1 cup toasted garlic croutons optional

Instructions

  • In a small bowl or jar, whisk together the olive oil, balsamic vinegar, sugar, salt, and black pepper until well combined.
  • Wash and cut the tomatoes into bite-sized pieces.
  • Chop the green onions, dice the green pepper, and finely mince the garlic.
  • Place the tomatoes, green onions, green pepper, and garlic into a large mixing bowl.
  • Pour the prepared dressing over the vegetables and gently toss until evenly coated.
  • Stir in the chopped fresh parsley.
  • Cover and refrigerate for at least 1 hour to allow the flavors to develop.
  • Just before serving, sprinkle with grated Parmesan cheese and top with garlic croutons, if using.
  • Serve chilled and enjoy.

  • Use ripe, in-season tomatoes for the best flavor.
