Tarator
Tarator is a traditional refreshing cold Bulgarian soup made with yogurt, cucumber, garlic, walnut, dill, oil, and water. It can be served as a soup or is a soup or appetizer.

- 1½ lb Bulgarian yogurt
- 2 lb medium cucumbers (peeled and finely diced)
- 1-2 cups cold water (adjust consistency)
- ¼ cup walnuts (optional, chopped and lightly toasted)
- 3 tbsp sunflower oil or olive oil
- 2 cloves garlic (minced)
- 2 tbsp fresh dill (finely chopped)
- black pepper to taste
- salt to taste
In a large bowl, whisk the yogurt until smooth.
Gradually add cold water while mixing to reach desired consistency.
You can use a cutting board to finely chop garlic, cucumber, half of the walnuts, half of the dill.
Transfer the diced cucumbers, garlic, dill, and olive oil into a large bowl and mix with the yogurt.
Season with salt and black pepper, and mix well.
Chill in the refrigerator for at least 30 minutes.
Serve cold or add some ice cubes and sprinkle the remaining walnuts. Add fresh dill, and a drizzle of olive oil.
Notes (Pro Tips)
- Use thick yogurt for best texture
- Always serve well chilled
- Add water gradually to control thickness
- Use fresh dill (not dried)
- Add walnuts just before serving for crunch
