Tarator

Tarator is a traditional refreshing cold Bulgarian soup made with yogurt, cucumber, garlic, walnut, dill, oil, and water. It can be served as a soup or is a soup or appetizer.

Ingredients

  • lb Bulgarian yogurt
  • 2 lb medium cucumbers (peeled and finely diced)
  • 1-2 cups cold water (adjust consistency)
  • ¼ cup walnuts (optional, chopped and lightly toasted)
  • 3 tbsp sunflower oil or olive oil
  • 2 cloves garlic (minced)
  • 2 tbsp fresh dill (finely chopped)
  • black pepper to taste
  • salt to taste

Instructions

  • In a large bowl, whisk the yogurt until smooth.
  • Gradually add cold water while mixing to reach desired consistency.
  • You can use a cutting board to finely chop garlic, cucumber, half of the walnuts, half of the dill.
  • Transfer the diced cucumbers, garlic, dill, and olive oil into a large bowl and mix with the yogurt.
  • Season with salt and black pepper, and mix well.
  • Chill in the refrigerator for at least 30 minutes.
  • Serve cold or add some ice cubes and sprinkle the remaining walnuts. Add fresh dill, and a drizzle of olive oil.

  • Use thick yogurt for best texture
