Ingredients

  • 2 red bell peppers, diced
  • 1 English cucumbers, diced
  • 4 tomatoes, diced
  • 5 radishes, thinly sliced
  • 1 small sweet onion or purple onion, thinly sliced
  • 2 green onions, finely sliced
  • ¼ cup fresh parsley, chopped
  • 1 cup feta cheese, crumbled
  • ¼ cup sunflower oil or other mild-flavored oil
  • salt and pepper to taste

Instructions

  • Wash and prepare all vegetables. Dice the bell peppers, cucumber, and tomatoes. Thinly slice the radishes, onion, and green onions.
  • Place all vegetables in a large mixing bowl and add the chopped parsley.
  • In a small jar or bowl, combine the sunflower oil, salt, and black pepper. Shake or whisk until combined.
  • Pour the dressing over the vegetables and toss gently to coat evenly.
  • Add most of the crumbled feta cheese and lightly fold it into the salad.
  • Sprinkle the remaining feta cheese on top for garnish.
  • Serve immediately and enjoy.

Notes

  • Use ripe seasonal tomatoes for the best flavor.
  • Add a splash of vinegar or lemon juice for extra brightness.
  • For a vegan version, simply omit the feta cheese.
  • Serbian Salad is best served fresh but can be refrigerated for up to 1 day.
