Fava with Lemon and Onion

The bean purée is a delicious side dish made from the beans, with garlic, onion and lemon juice.

Ingredients

  • 500 g fava beans
  • 3 onions, chopped
  • 2 garlic cloves, crushed
  • 3 cup hot water
  • 1-2 juice of 1-2 lemons
  • 1/2 cup olive oil
  • salt and pepper

Instructions

  • Over medium heat place a pot and add water. Bring it boiling and add the fava beans.
  • When the beans are ready take off the pot from the heat and add a saucepan, and the olive oil with the garlic and the onion. Saute for a few minutes.
  • Stir for a few minutes until the chopped onion takes some color. Add the cooked fava to a blender with the juice of one lemon and the half of oil, then until reaching a homogenized mixture.
  • Then add the garlic, onions, and the remaining oil and stir well.
