Fava with Lemon and Onion
- 500 g fava beans
- 3 onions, chopped
- 2 garlic cloves, crushed
- 3 cup hot water
- 1-2 juice of 1-2 lemons
- 1/2 cup olive oil
- salt and pepper
- Over medium heat place a pot and add water. Bring it boiling and add the fava beans.
- When the beans are ready take off the pot from the heat and add a saucepan, and the olive oil with the garlic and the onion. Saute for a few minutes.
- Stir for a few minutes until the chopped onion takes some color. Add the cooked fava to a blender with the juice of one lemon and the half of oil, then until reaching a homogenized mixture.
- Then add the garlic, onions, and the remaining oil and stir well.
