Polneti Piperki are popular delicious dish in Macedonia made of peppers, stuffed with a mix of meat and rice in tomato sauce.

  • 8 large red bell pepper
  • 1 large ripe heirloom tomatoes
  • 1 large yellow onion
  • 3 tbsp olive oil
  • 100 g proscuitto
  • 1 1/2 lb ground turkey
  • 3 cloves garlic
  • 1 cup dry barley
  • 1 tbsp paprika
  • large handful fresh basil
  • salt to taste
  • pepper to taste
  • 3 medium potatoes

For the paprika sause

  • 2 tbsp olive oil
  • 2 tbsp flour
  • 2 tsp paprika
  • 2 cup water
  • 1 large ripe heirloom tomatoes
  • salt
  • pepper


Prepare Polneti Piperki

  • Over low-medium heat add a large frying pan with few drops oil. Chop the onion and add with salt to the pan and saute for 4-5 minutes. Then add minced garlic and cook for one minute.
  • Now increase the heat to medium and add the chopped prosciutto and cook for a few minutes. Then add ground turkey and cook until brown on all sides.
  • Add cooked rice and stir then add paprika and add chopped tomato and stir again. Turn off the heat and add basil, season with salt and pepper, and stir.
  • Preheat oven to 450 F and prepare the peppers by cutting off the top of the pepper and remove the core and all seeds. Use the the meat mixture to fill each pepper and close with the top of pepper.
  • Transfer the peppers into a baking dish and set aside.

Prepare Paprika Sauce

  • Turn the heat over medium and add a pan with a few drops olive oil. Add flour and stir for a few minutes then add paprika and continue stirring. Slowly add ½ cup of hot water and whisk until make a good mixture then continue with another ½ cup and continue until smooth.
  • Bring to the boiling, season with tomato, salt, pepper and remove from heat.
  • Pour the sauce over the peppers and add the rest in the dish. if you want you can cover the baking dish with tin foil. bake the dish in the oven for 45 minutes, you can rotate the polneti piperki to make sure does not burn.
