Vasa’s Torte

This traditional Serbian cake has a creamy filling made with walnuts, fresh oranges and a touch of dark chocolate, and fresh whipped cream and chocolate on top.

Ingredients

  • 5 eggs
  • 1/3 cup granulated sugar
  • 1/2 cup walnuts
  • 1 tbsp flour
  • 1 orange orange juice

For the filling

  • 250 g walnuts
  • 4 egg yolks
  • 1/3 cup granulated sugar
  • 2/3 cup butter
  • 50 g dark chocolate chips
  • 1/2 cup milk
  • 1 orange juice

For the cream topping

  • 2 cup heavy cream
  • 3 tbsp powdered sugar

Instructions

  • Preheat oven to 350 F.
  • Grease the sides of a baking mold dish form and place a baking paper at the bottom.
  • Separate the egg whites and egg yolks. In a large bowl whisk the egg whites until pale and fluffy. With constant beating, add sugar and mix until smooth. 
  • Using another bowl add flour, egg yolks and walnuts and mix slowly with hand mixer.
  • Slowly combine the mixture with the egg whites mixture then transfer to the baking mold dish and bake for 25 minutes.
  • Grate the orange peel on a fine grater and squeeze the juice from it and drizzle with juice over the baked dish. 
  • Heat a sauce pan and add milk, and mix with 1 tbsp sugar to melt. Then add in the dark chocolate and stir to melt. Turn off the stove and mix the melted chocolate with the zest and juice of one orange and stir well. Add ground walnuts and continue stirring.
  • Whisk the egg yolks and 60 g of sugar in a separate bowl, then add it to the chocolate mixture and butter and mix well with the butter.
  • When the mixture is ready pour it over the cake then set it in the fridge for 2 hours.
  • Last step is to prepare the cream by whip the cream and the sugar then decorate the cake.
