Bulgarian Zucchini Kufteta (Zucchini Patties)
These Bulgarian Zucchini Kufteta (Zucchini Patties) are easy and delicious vegetarian alternatives to meat kufteta, blended together and fried until golden. Zucchini Kufteta

Ingredients
- 2 cup zucchini
- 1 cup plain yogurt
- 1 egg
- 1 tsp fresh chopped dill
- 1 tsp fresh chopped parsley
- 1 tsp paprika
- ¾ cup all-purpose flour
- 2 tbsp oil
- salt
Instructions
- In a large bowl crack and beat an egg.
- Then add in the shredded zucchini and yogurt and mix well together. Add the flour, season with salt and herbs and mix well.
- Using a spoon form a patty and fry in a pan over medium heat from both sides until golden brown.
