Zucchini Kufteta

Eaten by the Bulgarians at home all summer, you too can make this simple recipe to charm your family and friends.

  • 2 cup zucchini
  • 1 cup plain yogurt
  • 1 egg
  • 1 tsp fresh chopped dill
  • 1 tsp fresh chopped parsley
  • 1 tsp paprika
  • ¾ cup all-purpose flour
  • 2 tbsp oil
  • salt


  • In a large mixing bowl slightly beat egg.
  • Then add in zucchini and yogurt, then spices, salt and herbs and finally flour.
  • Take a spoonful of batter and form into a patty. Then fry both sides until golden brown.
